Cauliflower "Burger"
If you are not looking to save on the carbs I would use a whole grain ciabatta, otherwise swap the romaine pictured for a butter lettuce or collard green. This version ended up a fork and knifer because I didn't have any strong lettuce at the time. I pre-marinated my cauliflower patties to let the flavor really soak in but if you're short on time you could marinate right into the pan.
Ingredients:
(cucumber sauce)
3-4 tbsp. greek yogurt
1/4 cup chopped cucumber
1/2 teaspoon fresh crushed garlic
1 teaspoon fresh lemon juice
pinch salt/pepper
(cauliflower burger)
1 head of fresh cauliflower
1 tsp turmeric
1 tablespoon chili infused olive oil or extra virgin olive oil
salt/pepper
1 tsp garlic powder
(toppings)
4-6 large butter lettuce leaves
1 beefsteak tomato sliced
1 small red onion sliced
1 small avocado sliced
1 jalapeno sliced (optional)
Directions:
In a small mixing bowl, add all of the cucumber sauce ingredients. Mix well, cover and place in the refrigerator until ready to serve
Take the cauliflower and cut directly down the center in half. From the center slice, gently cut approximately 1 inch thick slices. Depending on how large the cauliflower is, you should be able to get 3-4 bread-like slices (I used a medium-small cauliflower)
On a flat pan or plate, generously brush each side of the cauliflower steaks with olive oil, garlic, turmeric, salt and pepper. To avoid the cauliflower breaking apart, use a spatula to gently flip
Over medium heat, lay the cauliflower in a frying pan (you can lightly oil the pan or use the excess oil from your pre seasoning). Cook each side for 15 minutes or until slightly browned and tender. I gently pressed each side with the spatula to allow a crispy coat
Lay the lettuce, tomato, onion, avocado and hot peppers, then place a dollop of the cucumber sauce on top. Top with another piece of lettuce to create a sandwich
