Cucamelon Salad
Cucamelons tend to fall under the radar when it comes to tasty fruits. In the cucumber family only a tiny bit sour, these mini bites are the perfect crunch and flavor to toss into a fresh salad. I enjoy mixing all of the veggies into the dressing and then top over a bed of lettuce.
When working with feta in a dressing you can also eliminate the lemon juice if you don't want the tangy element. Just add extra oil in place of the lemon, it will still be delicious.
Ingredients
kale
pint of cucamelon
pint of cherry tomato
4-5 radishes
1/2 medium red onion
3-4 mini sweet yellow peppers
Dressing
1/4 cup extra virgin olive oil
1/2 lemon juice
1 teaspoon garlic powder
1/4 cup crumbled feta
salt/pepper
